We have noticed that pork fried rice is perhaps one of the most well known Chinese takeout dishes out there. Infact, anything that involves rice and pork combination is most likely to win the Chinese audience.

In order to prepare pork fried rice, I recommend that you use jasmine rice. Jasmine rice is a long grain fragrant rice that has a great mixture and is known to be perfect for fried rice because it does not get sticky like the regular short grain rice. However, it is necessary to note that the rice must be cooked before making fried rice. It is very okay to use either freshly cooked rice or better still, leftover rice. I will recommend leftover rice if you are a novice. This is because the rice tends to have less moisture and will be much more easier to break up into individual rice grains.

Cook Time: 10 mins

Total Time: 25 mins

Course: Pork

Cuisine: Chinese

Servings: 6 servings

Calories: 377kcal

Ingredients:

1. 1 tablespoon hot water

2. 1 teaspoon honey

3. 1 teaspoon sesame oil

4. 1 teaspoon Shaoxing wine (or dry cooking sherry)

5.1 tablespoon soy sauce

6. 1 teaspoon dark soy sauce

7. ¼ teaspoon white pepper

8. 5 cups cooked Jasmine rice (add 1 teaspoon oil to rice when cooking)

9. 1 tablespoon oil

10. 1 medium onion (diced)

11. 1 pound Chinese BBQ pork (450g char siu cut into ½ inch chunks)

12. 1 teaspoon salt to taste

13. ½ cup bean sprouts

14. 2 eggs (scrambled)

15. 2 scallions (chopped)

Step by step instructions

1. Start by combining the hot water, soy sauce, honey, dark soy sauce, sesame oil, shaoxing wine (if using), and white pepper in a small bowl. This is the sauce that you will be adding to the rice, therefore, it is much more easier to have it combined and ready to go before you begin the cooking process.

2. Take your cooked rice and fluff it with a fork or with your hands (you are free to rinse your hands in cold water if the rice starts sticking to them). Make sure there ain’t any big clumps.

3. Now with the wok over medium heat, add a tablespoon of oil and then sauté the onions until translucent. Once this is done, in the roast pork. After that, add the rice and mix well. If perhaps the rice is cold from the refrigerator, be sure to continue stir-frying until the rice is warmed up. Note that this process should only take nothing less than 5 minutes. But should incase the rice was made fresh, then all you need to do is to mix until everything is incorporated.

4. Add the sauce mixture together with salt to taste and mix with a scooping motion until you see that the rice is evenly coated with sauce. At this stage, you will have to break up any remaining clumps of rice with the spatula as best as possible, but there is absolutely no need to be obsessive. The rice should be hot by this time.

5. Toss in the mung bean sprouts, as well as the scrambled eggs, and scallions. Mix everything thoroughly for an additional 1 minute or 2 and serve hot.

Southern pork and rice

This a classic Southern rice recipe that is  made from pork stock or chicken and pan drippings. It is a very easy recipe to make. All you need to do is to follow the instructions as outlined below.

Yield: 4 Servings

Prep time: 5 Mins

Cook time: 20 Mins

Total time: 25 Mins

Ingredients:

1. 2 cups pan juices from any slow-cooked meat

2. 1 cup uncooked, long-grain white rice

3. Salt to taste

Step by step instructions:

1. With the use of a measuring pitcher, measure 2 cups of broth. Note that the fat will settle on the top of the broth, therefore,  do not consider the fat when measuring the broth. You will only need 2 full cups of liquid plus the fat. Now if the meat you have cooked does not render a full two cups of liquid, be sure to add broth or water until you have two full cups.

2. Now add the broth with fat to a medium saucepan, cover it, then bring to a boil. Once it starts boiling, add the uncooked rice. Be sure to reduce heat to very low heat but not all the way down to the lowest setting, then cover tightly. Cook for approximately 20 minutes or perhaps until the rice becomes tender. Stir with a fork at intervals for the first 15 minutes of cook time. Make sure you do not disturb rice the last 5 minutes of cooking.

Carefully remove from heat and allow it sit, covered, for  just 10 minutes. Serve.

Note:

1. The amount of liquid generally determines how much rice you cook as this recipe will easily double or triple.

2. How salty your pan juices are will generally determine how much salt you need (that is if you need any).

3. Greasy rice is typically made from slow-cooked (it could be either baked or crock pot) pork or chicken but it can also be made from the pan juices of any meat that renders fat when slow-cooked.
