This chewy chocolate chip cookies recipe is one of my favorite! All you need to achieve the best result is ready at your disposal. Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 3 hours, 22 minutes
Yield: 16 large cookies
Skill level: Easy
Course: Dessert
Cuisine: American.
Ingredients:
1. 2 and ¼ cups (that is 280g) all-purpose flour
2. 1 teaspoon baking soda
3. 1 ½ teaspoons cornstarch
4. ½ teaspoon salt
5. ¾ cup (that is 170g) unsalted butter (melted and slightly cooled)
6. ¾ cup (that is 150g) packed light or dark brown sugar
7. ½ cup (that is 100g) granulated sugar
8. 1 large egg plus 1 egg yolk at room temperature
9. 2 teaspoons pure vanilla extract
10. 1 ¼ cups (that is 225g) semi-sweet chocolate chips or chocolate chunks.
Step by step instructions
1. In a large bowl, whisk the flour, as well as the cornstarch, baking soda, and salt, then set aside.
2. Also, in a medium bowl, whisk the melted butter as well as the granulated sugar and brown sugar, then stir together until there are no brown sugar lumps remaining.
3. Once that is done, whisk in the egg first, followed by the egg yolk, then the vanilla extract.
4. Now pour the wet ingredients into the dry ingredients and mix them together using a large spoon or perhaps a rubber spatula. Note that the dough will come out very soft, yet thick (it is very normal). Carefully fold in the chocolate chunks. Note that there’s a possibility that they may not stick to the dough. This is so because of the melted butter, but it is advisable that you do your best to combine them properly.
5. Cover the dough and allow it chill in the refrigerator for either 2-3 hours or even up to 3-4 days. Chilling the dough is a very important part of the procedures that MUST not be neglected. Personally, I recommend you refrigerate the dough overnight for less spreading.
6. After refrigerating the dough, take it out and allow it to slightly soften at room temperature for just 10 minutes.
Here comes the most interesting part of the procedures;
7. Preheat oven to 325 degree Fahrenheit.
8. Line two large baking sheets with parchment paper and set aside.
9. Now roll the dough into balls, should be about 3 tablespoons of dough each. (At this stage, the dough will be crumbly. Don not worry as the warmth of your hands will help the balls stay firmly in place). It is much more advisable to roll the cookie dough balls taller rather than wider. This is so as to ensure that the cookies will bake up to be thick.
10. Now place eight balls of dough onto each cookie sheet. And if you desire, press an additional chocolate chips or chunks on top of the dough balls for a more presentable look.
11. Bake the cookies for nothing more or less than 12 to 13 minutes. (At this stage, it is very normal that the cookies will look very soft and underbaked. Do not worth as they will continue to bake on the cookie sheet).
12. Allow it to cool on the cookie sheet for approximately 10 to 12 minutes before transferring to a wire rack to cool completely.
Your cookies can stay fresh covered at room temperature for up to 1 week!
