1. Heat the broiler.

2. Wrap each scallop in a piece of bacon and secure it using a toothpick.

3. Place the bacon wrapped scallops onto a baking sheet, and drizzle them with olive oil. Also season them salt and pepper.

4. Now cook them under the broiler for approximately 10 to 15 minutes until the bacon is cooked through, turning just once.

5. You can prepare the spicy mayo by combining the chili paste, as well as the chopped cilantro, lime juice, and mayonnaise.

5. 1 pound bay scallops (that is about 36 small scallops)

6. 1 pinch coarse salt

7. 1 pinch freshly cracked black pepper.

Step by step instructions

1. Using a small bowl, mix mayonnaise and Sriracha sauce together and refrigerate until ready to serve.

2. Preheat the air fryer to 390 degrees Fahrenheit.

3. Spread scallops out onto a plate or perhaps a cutting board and blot dry using a paper towel.

4. Season with some salt and pepper.

5. Wrap each scallop with ⅓ slice of bacon and secure with a toothpick.

6. Spray the air fryer basket with cooking spray.

7. Place bacon-wrapped scallops in the basket in a single layer.

Note: you can split them into 2 batches if you feel it’s necessary.

10. Now carefully remove scallops with tongs and place on a paper towel-lined plate. This is done so as to absorb excess oil from the bacon.

Cook note:

I recommend you use smaller bay scallops for this. But if you are using jumbo scallops, then you should know that it will requires a longer cooking time and longer strips of bacon.
