Instructions

To  make braised country style ribs, first preheat the oven to 300ºF. Once that has been done, follow these procedures:

1. Pat the ribs dry, then season with the Old Bay Seasoning. Add the salt to give it taste together with the pepper. Once that has been done, heat 2 tablespoons of the oil in a Dutch oven. Brown the ribs by cooking in batches until all sides are browned then remove all of the ribs to a plate.

2. Once that has been done, add the remaining tablespoon of oil to the pan. Also add the carrot, celery and onion bulb and then cook until softened. Note that this process only takes nothing less than 3-4 minutes. After 4 minutes, add the garlic and cook another minute. Add the tomato paste as well and cook. Keep stirring to cook out the raw flavor for just a few more minutes. Now stir in the apple cider vinegar to deglaze the pan, then carefully add the bay leaves and red pepper flakes. Once that is done, season with salt to taste and pepper (if needed).

3. Place the ribs back into the pan and add the chicken stock (be sure that it reaches about halfway up the sides of the ribs.) Bring to a simmer. Once that is done, cover the pan and transfer to the oven. Cook until the ribs become tender. Note that this process takes about 2 hours. When about ½ hour remains, uncover the pan so as to allow the liquid to reduce a bit and for the pork to brown.

4. When the ribs are fully done, carefully remove the pan from the oven to the stove then transfer the ribs to a plate. Cover lightly with foil so as to keep warm. Whisk together the water as well as the cornstarch then stir into the liquid in the pan. Be sure to cook it over medium heat. 5. Now put them in the oven for just 1 hour. After 1 hour, remove the foil and apply your favorite barbeque sauce and cover again with foil and cook another 15 minutes. After 15 minutes, remove the foil and apply more BBQ sauce, carefully place back in the oven for another 5 minutes.
