Blue cheese dressing recipe

(1) 1/2 cup of mayonnaise

(2) 1/4 cup of sour cream

(3) 1 tablespoon of milk

(4) 1 teaspoon of white wine vinegar (or more to taste)

(5) 1/4 teaspoon of worcestershire sauce

(7) 1/2 teaspoon of kosher salt

(8) 1/4 teaspoon of freshly ground black pepper

(9) 1/8 teaspoon of garlic powder

(10) 1/2 cup of (2 oz.) crumbled blue cheese

Steps by steps instruction:

(1) Combine mayonnaise, sour cream and milk in a small bowl then mix until it is smooth

(2) Stir in vinegar, worcestershire sauce, sugar, salt, pepper and garlic powder until it is well blended

(3) Fold in cheese

(4) Transfer into a container with tight fitting lid

(5) Chill until it is serving time then you stir well before serving.

(1) This recipe is still incrediblydelicious and tasty if you substitute in reduced fat mayonnaise and sour cream

(2) A quick method to prepare this recipe is to whisk together the mayo, sour cream, milk, and a few other ingredients to add some tang. Then you fold in the blue cheese since you’re making this at home, you can use a super mild or a super funky blue cheese meanwhile some people love that funk and others don’t but with this recipe you hold all of the power.

Homemade blue cheese dressing with buttermilk

Description :

This creamy buttermilk blue cheese dressing is easy to make at home. It is less stressful and the process isn’t cumbersome.

(1) 1 tablespoon of snipped chives (optional  but recommended)

(2) Freshly ground black pepper

(3) 1/2 cup of mayonnaise

(4) 1/2 cup of sour cream

(5) 1/2 to 1 teaspoon of worcestershire sauce

(6) 1/2 to 3 teaspoons of fresh lemon juice

(7) 1/2 to 3/4 cup of crumbled blue cheese (2 to 3 ounces)

(8) 2 to 8 tablespoons of buttermilk (1/8 to 1/2 cup of preferably “whole” buttermilk)

Steps by step instruction:

(1) In a bowl stir or whisk together mayonnaise, sour cream, worcestershire sauce, and lemon juice together

(2) Stir the blue cheese (start with 1/2 cup ) using the back of a spoon to mash some of the crumbles into the dressing base

(3) Make sure you leave some of the crumbles intact for a chunky style dressing

(4) Stir in as much buttermilk as you need to create your desired consistency dressing

(5) Stir in chives or parsley then season to taste with black pepper and add additional worcestershire sauce and lemon juice to the taste

(6) Cover and refrigerate for at least one hour for the flavors to meld and preferably longer so that the flavor is best after 24 hours. Make sure you store, when tightly covered in the refrigerator for up to 3-5 days.

(1) 1/2 seedless cucumber, seeded and cut into 1/2 inch dice

(5) 1/2 cup of walnuts

(11) 2 romaine hearts, quartered lengthwise and thinly sliced crosswise

(12) 1/2 fennel bulb, cored and finely chopped

(13) 2 carrots, finely chopped

(14) 3 tablespoons of sherry vinegar

(1) Preheat the oven to 350 degree

(2) Spread the walnuts in a pie plate and toast them for about 10 minutes until they are golden in nature

(3) Let it cool then coarsely chop

(4) In a large bowl you will whisk and the shallot with the Dijon mustard, sherry vinegar, season generously with salt and pepper

(5) Add the olive oil and whisk it gets until smooth

(6) Add half of the blue cheese and whisk until the dressing is creamy in nature

(7) Add the lettuce, fennel, carrots, cucumber, apple, avocado, basil, walnuts and season with salt and pepper

Note : The original recipe calls for a tarragon vinegar and i usually just use fresh tarragon and vinegar but if you have a tarragon vinegar  you can by all means so with it and skip the fresh tarragon.

There are some frequently asked questions in which i am going to tackle in this article, these are :

(1) What kind of blue cheese should i buy? Now here’s the answer below :

Since the cheese is the primary flavoring agent in the mayonnaise and sour cream base then you should pick a good quality blue that crumbles well also one which is the best flavor but i always prefer to buy wedges instead of pre crumbled cheese. When choosing a cheese you have to visit the gourmet cheese case at your grocery store and ask if you can sample what they have in stock that day. The cheesemonger will usually make a few recommendations and you can get to taste and also choose one with the pungency you like best.

(2) What kind of buttermilk is suitable to use?

I like to use whole farm fresh cultured buttermilk both for its tangy flavor and also the ultra creamy texture. This is being stocked much more widely in regular grocery stores these days  you will often find it in the dairy aisle close to the glass bottles of milk or in the organic section. If you’re unable to find a “farm” buttermilk or want to lighten the dressing up a bit low fat cultured buttermilk can be substituted in place.

(3) Why are there different quantities for the blue cheese, worcestershire sauce, lemon juice and butter in this recipe?

Over the years i have tested this recipe across numerous batches with different brands and in doing so i have found out  that the quantities needed to make the best tasting blue cheese dressing can vary. Cheese quantities varies base on pungency which also dictated how much extra seasoning the dressing needs.

(4) How should i store my dressing?

Store the dressing in tightly covered container inside the refrigerator because it keeps your dressing well for 3-5 days. If you don’t think you will  use it all then i recommend you should halve the recipe and making it fresh as you need it.

(5) Can i use low fat sour cream and mayonnaise?

Yes you can but bear in mind that the dressing might be a bit thinner and requiring less buttermilk. Depending on the brand some low fat products also have a tangier flavor and so you might need to adjust the amount of lemon juice accordingly.
