This recipe for green bean almondine features fresh green beans with a buttery almond topping and this one is my all time favorite ways to enjoy green bean recipe.

Required ingredients :
(1) 3 tablespoons of butter
(2) 1/2 cup of sliced almonds
(3) 1/3 cup of shallots minced
(4) 1 pound of green bean Note : use the smaller French haricot vert green bean if you can find them
(5) Use salt and pepper
(6) 2 teaspoons of lemon juice
(7) 2 tablespoons of chopped parsley
Green bean almondine
Step 1 on how to prepare:
(1) Melt 1 tablespoon of butter in a skillet over a medium heat temperature
(2) Add the almonds to the pan and cook for 3-4 mins or until golden brown by stirring occasionally
(3) Remove the almonds from the pan and wipe the pan clean with a paper towel
(4) After that you then melt the remaining 2 tablespoons of butter in the pan
(5) Add the shallots and then cook for 4 mins or until tender
(6) Add the green beans and 1 tablespoon of water to the pan immediately
(7) Cook the beans by stirring occasionally until the green beans are tender and this will take about 4-5 minutes
(8) Stir in the lemon juice, salt and pepper immediately
(9) Sprinkle the reserved almonds over the green beans and along with the parsley then serve immediately
Step 2 on how to prepare:
(1) To get your green bean ready for this recipe then all you need to do is give them a good wash
(2) Trim off the stem end immediately
(3) Note : The fastest way to trim off the stem end is to line up a handful of green beans
(4) Then cut the stems off all at once because it makes the preparation time go much faster
(5) After all these your first step is to toast your almonds in melted butter
(6) I prefer to use sliced almonds which is chopped or slivered almonds which will also work perfectly
(7) After the almonds are toasted then they come out of the pan and shallots then the butter and green beans go right in
(8) The green beans cook until they become tender and then the buttered almonds are added back in along with some chopped parsley and lemon juice
(9) As for me i prefer to use the smaller french haricot vert green beans for this dish
(10) They often come pre packaged in bags in the produce area and if you can’t find haricot vert green beans then use the regular sized green beans because it will also do the trick
(11) Shallots are special type of onion and they taste like a cross between onions and garlic
(12) If you don’t have shallots at hand then you can simply use either minced garlic or minced onion instead
(13) I typically top this dish with fresh parsley because I always have it at hand
(14) If you don’t have parsley then feel free to use green onions, chives, or even fresh dill or basil

(1) Green beans are very healthy vegetable to consume and are packed with nutrients such as Vitamin A, C & K, potassium, iron, and calcium
(2) Green beans are also low in calories, low sodium, low carbohydrates and high in fiber
Other useful ingredients includes :
(1) Bacon: Stir in 1/3 cup cooked, crumbled bacon at the end
(2) Mushrooms: Make sure you saute sliced mushrooms along with the shallots before you add in the green beans
(3) Parmesan: Sprinkle parmesan cheese over the top right before you serve
Breadcrumbs: Add 1/4 cup of Italian or panko style breadcrumbs when you toast the almonds

This dish doesn’t take long to prepare neither does it process take long or look cumbersome.

Required ingredients :
(1) 3/4 cup of water
(2) 1/8 teaspoon of salt
(3) 2bags of (12 oz each) frozen cut green beans
(4) 1 tablespoon of butter or margarine
(5) 1 package of (8 oz) sliced fresh mushrooms (about 3 cups)
(6) 1 shallot of finely chopped
(7) 1 can of (10 3/4 oz) condensed cream of mushroom soup
(8) 1/2 cup of milk
(9) 1/2 teaspoon of salt
(10) 1 cup of freshly grated Parmesan cheese
(11) 1/2 cup of progresso panko crispy bread crumbs
(12) 1/2 cup of sliced almonds, toasted
(13) 1/4 cup of butter or margarine, melted
Steps by step instruction:
(1) Heat oven to 350 degree fahrenheit
(2) Spray 2 quart casserole with cooking spray
(3) In 3 quart saucepan you will heat water and 1/8 teaspoon of salt to boiling over medium high heat
(4) Add green beans
(5) Cover to cook 5 to 7 minutes or until tender then drain and set aside
(6) In 10 inch skillet you will melt 1 tablespoon of butter over medium high heat
(7) Cook mushrooms and shallot in butter for 6 to 7 minutes then stir occasionally, until tender
(8) In large bowl, mix green beans, mushroom mixture, soup, milk and 1/2 teaspoon of salt
(9) Spread in casserole then inside a small bowl, mix cheese, bread crumbs, almonds and 1/4 cup of butter then sprinkle over green bean mixture
(10) Bake uncovered 35 mins or until bubbly and topping is golden

(1) 3 dashes fresh coarse ground black pepper or 3 dashes lemon pepper
(2) 1 tablespoon of reduced sodium soy sauce

(2) 2 teaspoon of butter or olive oil
(3) 1 clove garlic crushed
(4) ¼ cup of sliced almonds or slivered almonds
(5) ½ teaspoon of salt to taste
(6) 1 teaspoon of lemon juice
(7) Lemon zest optional

(1) Bring a big pot of water to a boil or hot temperature
(2) Cook green beans for 5 mins, or until cooked to your desired tenderness

(1) If you purchased your green beans in bulk at your grocery store, you will first need to trim and prepare them before cooking
(2) Note : you can skip this step if you purchased the rinsed and trimmed green beans found in plastic bags in the produce section
How to trim your green beans :
By snapping :
(1) Hold the both end of the green bean with both hands
(2) Press into the bean using your thumbs until it snaps or breaks
(3) Repeat this process until all green beans are trimmed also
By cutting :
(1) Make sure you find the junction of the fibrous end and the bright green part on the green beans
(2) Cut and remove the end of all the green bean
(3) Repeat until all beans are trimmed also
(3) Bring a large pot of water to a boil then cook green beans for 4-5 minutes, or until cooked to your desired tenderness is achieved
(4) Blanch the green beans in an ice water bath immediately after cooking
(5) Immediately the next step is to drain the green beans once brought to room temperature
(6) Combine butter or olive oil, garlic, and almonds in the same large pot or in a separate large skillet over medium heat temperature
(7) Stir for 2 mins or until garlic is browned slightly
(8) Add the drained green beans, salt, and lemon juice to the pot
(9) Toss and warm up green beans for 3 mins

Note :
(1) Please make sure you do not skip this very important step because blanching the green beans is crucial in stopping the cooking process
(2) Remember that when you dunk the boiled beans in an ice water bath it halts the cooking process and gives your green beans that vibrant green color you see in the pictures
(3) If you don’t blanch the beans they will continue cooking and turn a darker and less vibrant green and no longer have that delightfully crisp texture
(4) Blanching green bean takes just a few minutes of your time and no longer than 5 minutes
(5) I love to blanch my green beans until they have come to room temperature and then i quickly reheat them in a skillet just before serving

(1) Green beans almondine taste best when served immediately after cooking
(2) If storing leftovers for later just know they will last for up to 3-4 days when stored in an airtight container in the refrigerator
(3) The best way to reheat leftover green beans is to heat them up in a skillet with a bit of oil or butter in it then cook over medium low heat temperature for 10 mins or until heated through
(4) While yes you can also freeze green bean and they will lose quite a bit of their crisp texture that is if freezing you store in a freezer safe container for up to 3-4 months
