1. You are to start with about 2 ½ to 3 pounds of pork loin, which is half of most pork lions. You can freeze the other half.
2. Trim the pork loin and cut into four equal slices.

4. Using a medium or large size crock pot, add one 14 oz can of beef broth, together with 2 tablespoons of chilli powder, ½ teaspoon of salt, the chopped small onion and 1 teaspoon liquid smoke for BBQ or 1 teaspoon cumin for Mexican (optional)
5. Now place the loin in the crock pot and cook on high for approximately 3 to 4 hours or on low for approximately 7 to 8 hours until it starts to fall apart.
6. Remove the pork carefully and shred with two forks then place back in the juices.
7. Add the shredded pork back to the slow cooker.
8. Add back just about ½ cup of the braising liquid per pound of pork. I recommend you start with 3 pounds and add back 1 ½ cup. You may also need a little more or less.
Be sure to test the moisture and add a bit more if necessary.
9. Note that if you are doing Mexican, you can add a cup of salsa. Add 1 cup BBQ sauce if you prefer BBQ.
10. Continue to cook on low for an additional 30 to 60 minutes.
