2. 1 cup flaked coconut

3. ⅓ cup all-purpose flour

4. 1 cup packed brown sugar

The first thing we need to do is to bake the potatoes. How?

1. Preheat oven 400 degrees.

2. Wash and pierce sweet potatoes with a knife, and then place on baking tray. Bake for approximately 40 to 45 minutes.

3. Lightly grease a souffle dish and set aside.

Now how do we prepare the topping?

1. In a medium bowl, combine all the topping ingredients, ranging from the ground pecans, to the coconut sugar, coconut oil, and rice flour and set aside.

How do we make the souffle?

1. Remove sweet potatoesn when it is cool enough to handle.

2. Peel skin and mash sweet potatoes using a potato masher.

3. Stir in coconut milk, as well as the vanilla, ginger, maple syrup, salt, sugar, coriander, and cardamom until it is fully combined.

1. 1 tablespoon butter

2. ½ small onion, finely chopped (½ cup)

3. ¾ cup coarsely grated Gruyere cheese

4. 1 cup sweet potato puree

5. 3 large eggs, separated

6. 1 small garlic clove, minced

7. ½ teaspoon dried thyme

8. Kosher salt and ground pepper

9. 1 tablespoon flour

10.  ½ cup milk.

Step by step instructions

1. Preheat oven to 375 degrees.

 2. Butter 4 ¾ cup baking dish and set aside.

3. Melt butter over medium-low heat in a medium saucepan.

4. Add garlic, thyme and onion and season with salt and pepper.

5. Cook, stirring at intervals, until onion is softened. This should only take about 8 minutes.

6. Stir in flour, cook, and stir for 3 minutes.

7. Whisk in milk and simmer until thickened. this should take about 2 minutes.

8. Remove from heat, and stir in ½ cup cheese and ½ teaspoon salt. Whisk in sweet-potato puree first, then egg yolks.

9. Beat egg whites in a small bowl with a pinch of salt until stiff peaks form. Whisk ¼ of whites into cheese mixture. Gently fold in the rest using a rubber spatula.

10. Place baking dish on a rimmed baking sheet then pour mixture into baking dish. Sprinkle with remaining cheese and bake for 15-20 minutes or until puffed and golden brown.
