1. Heat oven to 375 degrees Fahrenheit.
2. Spray bottoms only of 12 regular-size muffin cups with cooking spray.
Note: you can otherwise use liners.
3. Combine the sugar, as well as the eggs and oil, in a medium bowl and stir with wire whisk.

Cook notes:
It is advisable not to use liners. This is because the muffins are so moist they tend to stick and be a whole lot messy, unless you spray them lightly with non-stick cooking spray before starting the baking process.

Oven temperature may vary depending on the individuals’ oven. Therefore, I recommend you start checking for readiness at 18 minutes.
You will know when the muffins are ready when a toothpick inserted into the center comes out mostly clean.

This is one of my favorite recipes. It is very easy and straightforward. It requires just about eight minutes of your time for preparation. In this case, the baking powder is used as a substituted for the baking soda.

Ingredients:
1. 2 overripe bananas, mashed
2. ¾ cup granulated sugar
3. 2 eggs
4. 2 teaspoons vanilla extract
5. 1 ¼ cups all-purpose flour
6. 4 teaspoons baking powder
7. 1 teaspoon ground cinnamon
8. ½ teaspoon salt
9. ½ cup vegetable oil
Step by step instructions
1. Preheat oven to 350 degree Fahrenheit.
2. Spray a 9×5 inch loaf pan with non-stick cooking spray and set aside. This is done so as to make the muffins less sticky. Note that you can as well grease with oil or line with parchment paper rather than cooking spray of you have none.
3. Combine bananas, as well as baking powder, granulated sugar, cinnamon, and salt in a large mixing bowl.
4. Beat in the eggs, vanilla extract and oil.
